I used this Café du Monde beignets recipe this morning with fantastic results:
Combine:
- 6 fl oz lukewarm water
- 1 tsp dry yeast
- 1/3 cup granulated sugar
Let sit a few minutes to activate yeast, then add in and mix:
- 4 fl oz whole milk
- 1 egg
- 0.75 tsp salt
- 2 tbsp melted butter
- 18 oz (510 g) flour
(NB - add in the flour last so all other ingredients can be incorporated)
Directions (post-mixing):
- Gently knead the dough until it's smooth
- Lightly oil the mixing bowl, coat dough in oil, and cover. Place in warm place to rise for about an hour
- After dough has had time to rise, heat oil to 370°F
- Roll dough out to around 1.0-1.5 cm thickness. Using a knife or pizza cutter, cut out rectangles
- Drop dough into heated oil, turning occasionally until brown
- Remove fried beignets from oil onto paper towels to cool.
- Sprinkle with powdered sugar
